STUFFED AUBERGINES
With extra virgin olive oil IRINA
Ιngredients
10 long and large aubergines
400gr hard cheese – 5 big eggs
1 tsp salt – pepper & parsley
4 tbsp of extra virgin olive oil IRINA
For the cream
1 egg
4 tbsp milk
8 tbsp white grated cheese
200gr extra virgin olive oil IRINA
Execution
Cut the aubergines lengthwise in two pieces. Place them in cold water for 10 min, drain. With a spoon remove their core and place them in an oven tray. (Very close the one to the other). With a brush oil their inside. In a bowl mix well the aubergines core (chopped), the eggs bitten, the cheese, parsley chopped, salt, pepper, and olive oil. Fill up the aubergines with the mixture. In another bowl bit the egg, milk and grated cheese and make the cream. Spread cream over each aubergine. Brush each aubergine with olive oil. Bake for one hour in medium heat.
